Wiley Ranch Beef

Wiley, Colorado

Wiley Ranch Beef has been ranching the same land in southeast Colorado for four generations, about 120 years, give or take. That is long enough to have opinions about how beef should be raised, treated and finished, and the family is not shy about them.

The cattle are grass fed on some of the purest open range southeast Colorado has, then finished on a blend of grain, alfalfa and corn the family grows on its own ground. It is the farm to table idea applied to beef, and it means the ranch controls what the animals eat from the first day to the last.

Nothing in the herd has ever seen a growth hormone or anything else that did not exist when the great grandfather started ranching. The beef is dry aged two to three weeks, trimmed or ground, packaged by hand and quick frozen to hold the flavor. Every box is prepared the week it is ordered, vacuum sealed, packed in an insulated box and shipped to all of the lower 48, usually arriving within 72 hours.
